Seasonal flavours that are tickling us this time of year are: Lemon & Ginger, Apple & Chilli, Lime & Chilli, Gooseberry & Elderflower, and Rhubarb & Ginger.
There’s always a need for a bit of zip and warmth when it comes to chomping chocs in the chill, so we couldn’t resist being a bit more liberal with the fresh ginger and chilli when marrying the fresh fruit puree. As ever, we’ve used Madagascan and Arriba couverture to capture the season’s freshest notes.
